Soto – Indonesia Legendary Soup 

Soto is like indonesia national dish, every society have their own version with their own signature. There are so many of them, Soto lamongan, soto madura, soto kudus, soto banjar, soto bangkong, soto betawi, soto sokaraja, soto tauto and many more. All of them have their own uniqueness and flavors but somehow you still can recognize it as soto, amazing right!

Soto lamongan

Soto madura only used beef and cows stomach, livers, heart, kidney and sometimes their eye balls. Just say “gak pake jorohan” if you not ready with the flavor of cow stomach. Soto lamongan used chicken, from head to toe, oh chicken don’t have toe but they do have ceker (chicken feet). Koya is what gives soto lamongan it’s special flavor. Koya is powder made from shrimp crackers and garlic. Soto bangkong always serve in small portions accompanied with so many options condiments. It’s freshness, it’s size, one is never enough. Soto kudus also has its own uniqueness. Originally soto kudus used buffalo, that’s to honors Hindu’s society in their neighborhoods. Soto banjar is well known for is freshness, on the other hand Soto betawi well known for its thickness. Different but the same, sama but different.

Soto bangkong

Basically soto is soup made from beef or chicken stocks with Indonesia spices like garlic, nutmeg, cilantro seeds, turmeric, lemongrass, bayleaves, kaffir lime leaves, and some other ingredients based on what soto you’ll make. Most of them eat with rice but some of them eats with sweet potatoes, ketupat, or sagu. Soto serve every where but here’s a little secret the best soto not on the expensive restaurant or hotel.

Soto bangkong memiliki rasa yang ringan, selalu disajikan dengan porsi kecil dan ditemani beraneka macam camilan yang bisa dijadikan lauk juga. Soto kudus memiliki keunikannya sendiri, resep aslinya soto kudus dibuat menggunakan daging kerbau. Hal ini dilakukan untuk menghormati umat agama hindu di kudus.
