Ayam Goreng Lalapan 

Fried chicken is food of the state. It’s simple, humble yet it’s delicious. Chicken cut into pieces, marinated with salt, coriander seeds and turmeric for a beautiful color, and deep fry till it’s golden and crispy. Usually they use plain steam rice but some others use nasi gurih to serve with fried chicken. And this is what’s made it special, sambal. Hot, fresh, delicious sambal it’s what you expected. There are a lot sambal recipes is Indonesia, and every area have their favorite, such as sambal ijo in West Sumatra, sambal terasi in eastern Java, dabu-dabu in Sulawesi, sambal matah in Bali, and many more. 

Ayam goreng lalapan, served hot, complete with rice, fresh sambal, lalapan which means fresh vegetables, and krupuk. 

FYI: if you order ayam goreng lalapan, and they asked you, “pedas atau enggak” which means spicy or mild, always answered with no, not spicy or “enggak pedes”. Why? Because pedas is mean they use more than 5 chilis. How much chili they actually put in your sambal, you never know, they just grab it and throw in your sambal.

Ayam dibumbu sederhana, garam, ketumbar, dan kunyit, diamkan beberapa saat agar bumbu meresap baru kemudian di goreng. Nasi bisa nasi putih biasa saja atau nasi gurih. Nah ini faktor penentunya, sambal, jika sambalnya enak semua akan jadi lebih nikmat tapi jika sambalnya gak nikmat bisa mengurangi ctarasa.
